CHEESY FRITTATA

Frittata is an egg-based Italian dish similar to an omelette or crustless quiche or scrambled eggs, this one includes vegetables and cheese.

INGREDIENTS

  • 2 sp butter

  • ½ cup sliced onion

  • ½ cup red bell pepper

  • ½ cup zucchini

  • ½ cup egg whites

  • ½ cup low fat cottage cheese

  • ¼ cup evaporated milk

  • ¾ ounce shredded reduced fat cheese

  • Salt and pepper to taste

  • Basil or other preferred garnish 

INSTRUCTIONS

  1. Heat cast iron pan over medium high heat, add butter

  2. Add onion, bell pepper, and zucchini over medium low heat until vegetables are lightly browned 

  3. Then add tomatoes, salt and pepper until flavors are blended

  4. Preheat the boiler 

  5. In a blender combine eggs, cottage cheese and milk until smooth. Pour egg mixture over the vegetables

  6. Cover and cook over medium low heat until bottom is set

  7. Transfer skillet to broiler until top is set, 2-3 minutes

  8. Sprinkle with cheese and broil until the cheese melts

  9. Garnish with basil leaves
